Superfine Apple Muffins

Ingredients
250 g of wholemeal flour
1.5 teaspoons of baking powder
1 teaspoon of cinnamon
1/2 teaspoon of baking soda
1/2 teaspoon salt
120 g of grated apple
120 g of diced apples
70 ml of melted coconut oil
2 spoons of honey
2 eggs
130 ml of Greek yogurt
120 ml of unsweetened apple juice
1 teaspoon of vanilla extract
Directions
- Preheat the oven to 180 degrees. Mix flour and baking powder in a large bowl. cinnamon, baking soda and salt. Add grated and sliced apples and mix.
- Whisk the coconut oil and honey in a small bowl, then add the eggs and mix well until smooth. Then add yogurt, apple juice and vanilla extract and mix.
- Then slowly pour the wet ingredients into the dry, stirring constantly. The mixture will be a little sticky, but don’t worry, that’s how it should be.
- Then pour the mixture into muffin tins and bake for about 30 minutes, or until they get a nice golden-brown color.
