Stracciatella Ice CreamCourse: Frozen
350 cl Whole milk
150 cl Whole liquid cream
150g Dark chocolate
1 clove Vanilla
In a saucepan, mix the milk, the cream and the sugar. Cut the vanilla pod in half and scrape the seeds above the pan then add the whole pod to the pan as well.
Heat the milk until the boil begins. Then remove the pan from the heat and let cool. Once cold, place the milk in a container and cover it with cellophane paper. Let cool for 3 hours.
Take out the milk and remove the vanilla pod. Break the chocolate into pieces and melt it in the microwave. Pour the milk into the ice cream maker and when the ice begins to set, pour the chocolate in several batches.
Leave the Stracciatella ice cream to set in the ice-cream maker, then serve immediately or store in the freezer.
