Refreshing Lemonade Flavored Ice CreamCourse: Frozen
Is there anything more beautiful than fresh homemade ice cream during the summer days?
cups (250ml) of milk
6 egg yolks
2/3 cup sugar
1 teaspoon of lemon extract
finely grated zest of three lemons
2 tablespoons of fresh lemon juice
1/3 cup of undiluted lemonade concentrate
Pour the milk into the pan and put it on the stove to boil, cover and set aside.
Whisk the egg yolks and sugar well with a mixer until they become thick and light.
Pour the mixture of egg yolks and sugar lightly into the milk, stirring constantly.
Return to the stove and heat over low heat until it starts to thicken. Stir constantly with a food processor. Don’t let it boil, because the eggs could coagulate. Add lemon extract, zest and juice and stir.
Allow the mixture to cool to room temperature and refrigerate for at least 3 hours. Then put the mixture in the freezer or in the ice cream machine. If you put it in the freezer, make sure to stir the mixture with a whisk, every 20 minutes, until it is completely frozen. When it starts to freeze, add the concentrate and continue with the process.
