Raw Chocolate Cake for Those Who Like Fine and Healthy
Course: CakeThis chocolate cheesecake for whose preparation you do not need sugar and oven is made from nuts, cocoa, bananas, dates and its filling is sweet and creamy.
Ingredients
- Ingredients for the base:
110 gr of walnuts
40 g of unsweetened cocoa powder
200 g of boned dates
1 tablespoon vanilla extract
1 pinch of salt
- Ingredients for the filling:
360 g of cashew nuts, soaked overnight in cold water, then drained
1 1/2 teaspoons vanilla extract
165 g of frozen ripe bananas
1 tablespoon lemon juice
3 tablespoons water
pinch of salt
40 g of unsweetened cocoa powder
75 g of boned dates
Directions

For the base: In a food processor or blender, chop the walnuts until you get coarse crumbs. Add the remaining ingredients and turn on the blender or processor until all the ingredients are finely chopped, well combined and until you get a crumbly mixture. -
Press about 200 g of the resulting mixture evenly into a round cake pan. Put it aside. -
For the stuffing: Wipe the food processor bowl or clean the blender, then add the stuffing ingredients. Stir well, until you get a smooth mixture. Taste the mixture, depending on the amount of sweetness add more dates as desired. Pour the resulting mixture into a cake tin lined with the base mixture and use a spoon to flatten it. Cover with aluminum foil and place in the freezer for 2 to 3 hours. -
Before serving, take out for 10 minutes to soften the cake a bit, and serve it with a scoop of ice cream or fresh fruit if desired. You can also sprinkle it with cocoa and coconut flakes or pour melted unsweetened chocolate over it before serving!
