Raffaello balls with lemon

Ingredients
1/2 lemon
3 tablespoons nut butter of your choice
1 tablespoon coconut oil
2-3 tablespoons of maple syrup (or other sweetener of your choice)
50 g coconut crumbs + 20 g for rolling balls
Lemon zest – optional
Directions

Squeeze the juice from half a lemon which should give you about 2-3 tablespoons, but if you want you can add more. -
Mix lemon juice with butter and tahini, coconut oil and maple syrup. Add grated lemon zest if desired. -
Add the coconut crumbs and mix until you get a dough-like mixture that you can shape into balls. -
Roll the balls in coconut for rolling and place in the refrigerator for a few hours or overnight.
