Ingredients
12 plums (1.2 kg), red or black, firm and ripe
4 tsp (16g) sugar
2/3 cup (170 mL) water
Directions

Wash the plums quickly. Separate them in half and remove the core. Place them in a saucepan with the sugar and water. Cook, covered, over medium-low heat for about 5-8 min, until the plums are tender. -
Let cool. Serve with its cooking juices, either lukewarm or at room temperature.

The compote will keep for 10 days in the refrigerator; up to 4 months in the freezer.
