4 kg of plums
600 g of sugar
200 grams of chocolate (preferably for cooking)
5 teaspoons of rum
1 teaspoon of cinnamon
- Wash and pit the plums. Take a large pot, put plums, add sugar and pour water to boil it all.
- The foam will form during cooking, you can remove it during cooking, but it is not necessary. After about twenty minutes, check if the plums have softened, and if not, let them cook a little more. If they are, mash them or mash them with a stick mixer, then leave them to cook for a few more minutes.
- Then add chocolate, rum and stir until the chocolate melts. Cook the mixture for another 10 minutes, then add the cinnamon, mix well and the jam is ready.
- Pour the jam into jars heated in the oven to 100 degrees, turn the jar on the lid and let it create a vacuum for 5 minutes. Then return them to their normal position and allow them to cool.
