250 grams of chocolate
2 tablespoons oil
1 sheet of gelatin
150 grams of mascarpone
40 grams of powdered sugar
1 sachet of vanilla sugar
100 grams of sweet cream
Melt the chocolate with the oil on steam and then coat 25 praline molds and leave to cool. Leave the rest of the melted chocolate to coat the pralines.
Put the gelatin in water to swell, and break the biscuits into small pieces, soak them in the coffee, and put them in the baskets.
Mix the mascarpone with vanilla sugar and powdered sugar, and mix the sour cream until it becomes whipped cream.
Add two tablespoons of sour cream to the swollen gelatin and heat it to melt. Then, add the mascarpone and whipped cream to the mixture and mix.
Fill the buns with biscuits with cream, put them in the fridge to cool, and then pour over the pralines with a layer of chocolate. Keep refrigerated.
