Chocolate PasteCourse: Bon Flavor
Yes, no less than a real straight paste, just made of chocolate!
The chocolate paste is a top pleasure for all gourmets and
1/2 kg of cake flour
100 grams of cocoa powder
Pinch of salt
3 tablespoons powdered sugar
4 large egg yolks
3 tablespoons extra-virgin olive oil
150 ml of water
Mix flour, cocoa powder, egg yolks and salt with a mixer.
Gradually add the oil, then the water and sugar until you get a doughy mixture. If the dough is too dry, add a little more water.
Sprinkle the flour on a clean work surface.
Spread the dough on that surface and shape it into a ball, and
for about 5 minutes.
Cover the dough with plastic wrap and put it in the fridge for about 30 minutes.
