Chocolate Minions With Chocolate Glaze

Ingredients
- For the bark:
00 g butter
150 g of sugar
4 egg yolks
50 g of chocolate
70 g of ground almonds
70 g of flour
6 egg whites
- For cream:
150 g of sugar
2 dcl of milk
50 g of cocoa powder
1 teaspoon density
1 vanilla sugar
70 g butter
- For glaze:
100 g of sugar
150 g of chocolate
5 tablespoons milk
Directions
Whisk in the butter and sugar, then add the egg yolks – one at a time.
Stir in the melted chocolate.
Add almonds and flour, then whisk to combine.
Beat the egg whites and then slowly add, stirring with a wire.
Bake in a greased pan with baking paper.
When cool, cut into cubes or circles.
For cream:
Mix the dry ingredients, then add the milk – little by little – stirring so that no lumps form.
Cook over low heat until it starts to thicken, then cool, stirring to form a crust.
Whisk the butter, then add to the cooked, cooled cream.
For glaze:
Melt the sugar in the milk, then add the chocolate and stir until combined.
Glue the cut parts of the crust with the cream into a “sandwich” (like vanilla jam), then arrange them on a wire and pour the glaze over them.
If desired, decorate further and leave the glaze to set.
