A delicious version of black bean brownies, rich in protein and low in fat.
2 cups (500 mL) black beans (canned), rinsed and drained
3 large eggs
1/2 cup (110g) sugar
1 tsp vanilla flavoring
1/4 tsp salt
1 pinch Cayenne pepper
3 tbsp canola oil
1/3 cup (28g) Cocoa Powder
3/4 cup (80g) walnuts, coarsely chopped
Preheat the oven to 175 ° C / 350 ° F. Oil and line a square pan with parchment paper .
Put the black beans in the food processor and mix until a puree is obtained. Add all the other ingredients, except the walnuts and mix well until a homogeneous mixture is obtained.
Add the nuts to the mixture, then pour into the baking dish. Bake in the center of the oven for about 25-30 min. Check for doneness using a toothpick or knife. Let cool before unmolding.
Cut into 12 pieces and serve.
